Pineapple delight

BM # 73 Week 4
Theme : Festival Recipes - Valentines Day
Recipe : Pineapple Delight

Yesterday, the daughter came back home, raving about a dessert that she had eaten at a friend's house. She had liked it so much that she had asked her friend's mom how it was made. So, today, she gave me instructions on how to make it and then proceeded to do it herself. I am not sure what the 'official' name of this dessert is but since the fact that it can be put together by a child is a source of delight to me and because Pineapple is one of the ingredients, I've decided to call it Pineapple Delight.



What you need :
Whipped cream - 1 small tub ( I make whipped cream at home with 1 cup of heavy whipping cream and 5 tsp of sugar. In this recipe, however, you can leave out the sugar)
Condensed milk - 1 tin
Pineapple chunks - 1 tin

If you are making whipped cream from scratch, make sure to buy heavy whipping cream and whip it till stiff peaks form.
In a large container, mix together the drained pineapple chunks and the condensed milk. Fold the whipped cream into this.
This can be served at room temperature, but I feel that it tastes even better chilled.

Coconut laddoo

When Nestle launched Milkmaid in India, they held a contest for school children in which we had to come up with innovative recipes using Milkmaid. What I still remember about the whole thing is how absolutely enticing the coconut laddoos that appeared in the TV commercials for Milkmaid looked. The mom and daughter duo who starred in the commercial made the whole dessert making process look so uncomplicated. I wanted to make these laddoos for the contest, but for some reason, ended up making carrot halwa. Nothing innovative about warm off the stove gajar ka halwa.....so no prizes for guessing how that contest turned out for me. Anyway, years later, I tried out the Milkmaid coconut laddoo and must say that when they said easy, they really did mean easy. Mix, heat, stir, shape - that's all there is to it.

What you need:
Coconut flakes - 5 cups (I used sweetened flakes that I bought off the shelf at Target)
Milkmaid /condensed milk - 1 tin

Set aside about 3/4th of a cup of coconut flakes.
In a large saucepan (preferably nonstick to save you the hassle of cleaning), mix the remaining coconut flakes and the condensed milk. Switch on the heat and stir until it comes together and starts leaving the sides of the pan. Let it cool a bit and then shape into balls with wet or oiled hands. Roll each ball over the coconut flakes that you've set aside so they get a nice coating of the flakes.
And as easy as that, you have an ooh-inducing dessert. Dig in.

Watermelon shake

This is a very, very easy to make dessert/snack. Kids are sure to love this....and so will the kid in you.
There's no real recipe as such....but I just thought I'd post this here because every time I have made this, the little girl has finished it off without me having to ask her to a zillion times in an increasingly louder and frustrated voice. Her friends too love this and usually ask for second helpings.
Without further ado, here's how you make it.

Grate watermelon....remove the seeds. Chill this until it is almost frozen, but not yet solid. Add Milkmaid (or any brand of sweetened condensed milk). If you have a shaker, transfer this to the shaker and shake well until mixed. If not, just stir it really well with a spoon and serve topped with some watermelon slices and a dollop of condensed milk.

Despite having made this several times, I haven't managed to click a pic of this, as it disappears almost as soon as it is ready. Next time, maybe I'll make it when she's at school and then update this post with a pic.
